What's for dinner?

Yellow Rice, Black Beans & Chicken

We really like this dish and I can cook the chicken the night before and cook enough for two meals to add to the rice and beans the next night.

1 package yellow rice prepared as package states
2 cans black beans
Dried onions (or diced onions)
Cajun seasoning

I cook the chicken on the stove with a little olive oil and cover with Cajun seasoning. I get chicken tenders and beginning cooking while they are still frozen, as they thaw you get a little water and don’t have to use much oil. Can serve over rice and beans as whole chicken tenders or dice.

Put black beans, onions with salt, pepper, and garlic while rice and chicken cook.

To serve make a bed of rice then beans and chicken on top.
In the picture, the one with whole tenders is John and he likes chips and salsa with his and I like my chicken diced on top with other veggies. I LOVE chicken salad and thought I would try a new recipe, which I only partly followed, and it was so good, John really liked it too.

New Chicken Salad

1 rotisserie Chicken, Shredded
½ cup sliced cherry tomatoes
1 cup sliced read grapes
3 hard-boiled eggs diced
½ cup diced artichoke hearts
¼ chopped pecans or walnuts
2 Tsp Mayo
1 Tsp miracle whip
Put all ingredients in a large bowl and mix, with salt and pepper, and garlic to taste. You can mix with romaine lettuce; serve on top of lettuce, on as a sandwich.

I have heard of currant grapes before but don't think I have ever seen them, I know I have never had them. I got these today, and they are SO SWEET. Harrison loves grapes but I don't like sliceing and diceing them so they are small enough to not scare me that they will choke him but these are great. They woul also be great as a frozen snack :)
