4th post of the day

We have been eating out of the freezer a lot lately so I thought it was time for a baking day. I had big plans but Harrison did not have big plans of Mommy being in the kitchen all day so maybe the rest will get done in the next few days. I don't like whole meals frozen they never seem to taste fresh to me but breads, doughs, and some meat items (like browned hamburger, meatloaf patties, chicken nuggets, sausage turnovers) do work well from the freezer. So while I do a lot of breads ahead we really don't eat all bread. :)
I did get a double batch of pizza dough done this morning which makes enough for 4 pizzas. I froze three pizzas worth and used the last part for lunch. since I had some leftover chicken that needed to be used up I made BBQ chicken pizza (just bbq sauce, onions, chicken, mushrooms, and what ever cheese I have on hand it is yummy)

Pizza Dough (enough for 2 pizzas or 6 personal sized)
3 cups all purpose flour
1/2 tsp salt
1 package of yeast (2 1/4 tsp)
1 c warm water
2 TBS oil

1. in a large bowl, mix 1 1/4 cups flour with yeast and salt, add warm water and oil. Beat with a whisk for 3 mins. stir in another 1 1/4 cups flour or enough so mixture holds together. place dough on a lightly floured surface. knead in rest of flour until lump- free. freeze half and cover the remainder for 10 mins.

2. heat oven to 425 degrees roll out dough and prick bottom of crust. bake for about 8 mins then spread sauce and toppings and bake for another 8 mins or so.

I also had LOTS of coffee breaks today.
Loaded Oatmeal Cookies
1/4 c softened butter
1/2 c packed brown sugar
1/3 c sugar
1 tsp cinnamon
1/2 tsp baking soda
1 egg
1 tsp vanilla
3/4 cups all purpose flour
3/4 cups oats
1/4 c flax seed meal
1/4 c wheat germ
2 oz dark chocolate
1/4 chopped pecans

1. preheat oven 350 degrees. in a large bowl mix butter with electric mixer for 30 seconds. add brown sugar, sugar cinnamon, baking soda, and slat . Beat in egg and vanilla until combined. Beat in flour. Stir in oats, flax seed, wheat germ, chocolate, nuts. (dough will be a little crumbly)

2. Drop dough by rounded teaspoons bake for 9-11 mins.

Double Dark Chocolate Cookies
1/4 c softened butter
1/4 c oil
1/2 c brown sugar
1 egg
1 tsp vanilla
1/2 c whole wheat flour
1/2 c all=purpose flour
1/2 c cocoa powder
1/2 tsp baking powder
4 oz bittersweet chocolate
1. Preheat oven to 350. mix butter with electric mixer for 30 seconds. beat in oil, brown sugar, sugar until well combined. beat in egg and vanilla. in bowl whisk together flours, cocoa, baking powder, and salt then mix into wet mixture. stir in chopped chocolate.
2. drop dough by rounded teaspoons bake for 12 mins.
I froze my dough like this ...
Then once froze i put in bags for the freezer to pull out as needed to put straight in the oven.
